Blanched Spinach side dish (Korean: Sigeumchi-Namul)
A tasty and easy vegetarian side dish
Traditionally served as a vegetable side dish, this can either be a tasty entree or a vegetable dish.
3-4 bunches of water / English spinach (salad spinach is also okay)
1 tbsp minced garlic
1 stalk spring onion
1 tbsp soy sauce
1 tbsp sesame oil
Wash spinach thoroughly with running water
Blanch spinach for 30-60 seconds (Note: for salad spinach, simply running it with boiling water will suffice)
Strain and squeeze excess water
Roughly chop spinach into bite-sized pieces
Add condiments and mix
Spinach is high in insoluble fibre, iron, calcium, magnesium, vitamin A, vitamin K and folate. In fact, ½ cup of raw spinach will give you enough vitamin K for the day!
